Team Independent Snags Two Silver and Two Bronze Medals at the Hong Kong International Culinary Classics 2011

Our favourite culinary competition team, Independent, recently made its way to the internationally-acclaimed Hong Kong International Culinary Classics (HKICC) 2011 in Hong Kong and came back with a victorious win for all four participants.

Hello, Hong Kong!

Accompanied by Chef Lecturer and Competition Advisor, Chef Darren Teoh, the competing team, which comprised Pastry Chef Lecturer and Competition Advisor Raymond Tham as well as culinary students Petra Ong, NurilKarim B. Mohd Razha and Kevin Lam, brought home a total of 4 medals, two Silver and two Bronze.

The HKICC, which is part of HOFEX 2011, Asia’s most anticipated and established food and hospitality biennial trade shows, saw over 500 chefs from around the region taking part and is one of the only four culinary competitions endorsed by the World Association of Chefs Societies (WACS).

Competing in the Pastry Showpiece category, Chef Raymond Tham sculpted and fashioned an old-style Baba & Nonya living room, named The Peranakan House, out of ground almond, icing sugar, gelatine and isomalt over a period of 6 weeks.

The detailing in every single part of the miniature living room is amazing – from the stencilled floor to the gold ornate window frame, wooden window shutters, marble table and stools, and also the traditional kuih-muih.

William Feather's quote on the meaning of education

In education, it isn't how much you have committed to memory
or even how much you know.
It is being able to differentiate
between what you do know and what you don't.
It is knowing where to go to find out what you need to know
and it is knowing how to use the information you get.

KDU College hosts MediaCorp’s “Chef Apprentice”

Students from School of Hospitality, Tourism and Culinary Arts had a rare experience on 27th April 2011 as KDU College Penang played host venue for MediaCorp’s latest TV programme - “Chef Apprentice”. The reality program took place at the famous KDU School of Hospitality and Culinary Arts Production Kitchen which is fitted with state-of-the-art equipment customized to the hotel industry kitchen specifications.

The fast-paced competition set in a high-pressured kitchen environment follow the trials and tribulations of two Master and Apprentice teams led by two celebrity Master Chefs – Chef Sunny Sia and Chef Eric Teo from Singapore. In this episode, Apprentice Andrew Chua Kia Hong under the guidance of Chef Sunny Sia prepared an exotic dish – “Stuffed Chicken with Mushroom Rice & Mango Acar” whereas Apprentice Eugene Tan Chun Hao, led by Chef Eric Teo prepared the “Curry Kapitan ala Modern”.

Joining them in the kitchen, TV host Kym Ng exclaimed, “The challenge for the Apprentice is to prepare the tantalizing dish using a main ingredient within the stipulated time set by the Master Chefs”. The 10-episode programme were filmed on different set locations in Asia namely Macau, Hong Kong and Singapore. This exciting culinary event gives the audience an up-close and personal exposure to the apprentices’ action for the entire competition. Both contestants had to prepare the dishes based on local Penang gourmet together with the challenge to complete within the 1-hour guideline.

Earlier, both Master Chefs were spotted shopping for fresh ingredients at the famous Bazaar Chowrasta wet market for the cookout as the usage of specific ingredients for the dishes were of the upmost importance. According to Chef Eric Teo, “The recipe for Curry Kapitan adds a modern twist to it by using fresh pineapple juice to replace the lemon sauce. The creativity lies on one’s inspiration to improvise and use substitutes to enhance the flavours. Having a concept or idea on the main dish is important”.

For Andrew Chua, learning from the top players like Sunny Sia in the industry motivates him. “I am inspired to keep trying for new ideas in recipes. In fact, the color and smell plays important role when creating a dish. The idea is to think out of the box to make it work”. The judging of the competition was based on the creativity, ability to adapt to local cuisine and technique during food preparation. Winner will take home fabulous cash prizes and a trophy.

Speaking on the occasion, Program Leader from School of Hospitality, Tourism and Culinary Arts, Chef Syamsul Idham said that KDU College has great kitchen facilities for budding chefs. “Our students showed enthusiasm and this is an opportunity for them to meet fellow peer culinarians and judges from the television production”. With KDU College’s continuous efforts to provide good training facilities, this is a testament of KDU commitment to provide a firm platform for young chefs towards building a viable hospitality and culinary industry in Penang.

The Chef Apprentice debuts on Channel 8 (Singapore) from 2nd May 2011 onwards.
