In conjunction with Jamie Oliver's Food
Revolution Day on May 17th 2013, Switchup.TV, Star Publications (M)
Bhd. worked with students from School of Hospitality, Tourism and Culinary Arts
(SHTCA), KDU UC to explore traditional cooking skills and optimising food
resources.

The Food Revolution Day aimed to raise
awareness about the importance of good food and better food education for
everyone and this project fits in with the objective. Six (6) students from the
Diploma in Culinary Arts module (Chef7) took up the challenge to participate in
the project which took place at 8 Acres Homestay resort in Bentong, Pahang from
Friday, 10th – 12th May 2013. The students learnt how to build a stove from
bricks and clay from a nearby fish pond.
They also harvested vegetables, trawled for fish, caught and slaughtered
a duck and chicken. They cooked the duck and chicken in a pit oven and also
made sourdough bread from scratch with naturally grown starter.

At the end of the stay the students came away
with invaluable experiential learning on how to use local food resources to
prepare meals and alternative cooking methods which minimizes the carbon
footprint.

SHTCA sponsored the six students who participated in the programme. The project is part of a series of workshop
under the Ambassadors of Change programme.
